Deviled eggs are a long time family favorite snack in our house. We frequently find ourselves making them just about any time of day, and our kids happen to really love them too! Eggs are so good for you because they are a complete protein, meaning they contain all nine essential amino acids that your body needs.  A satisfying snack with good nutrients? Sign me up.

Best Deviled Egg Recipe:

This is the best deviled egg recipe because it has the perfect yolk to mayonnaise ratio in my opinion. This recipe can easily be increased. or decreased based on the amount of people you're feeding. When you remove all the yolks from your egg whites, simply stir in 1/2 tablespoons of may for every 1 egg yolk. This will result in egg yolks that are not swimming in mayonnaise, are the perfect shade of yellow, and have that rich yolk flavor.

How Long Does it Take to Boil an Egg:

When I'm making hard boiled eggs, I like to fill a pot with water and put in my desired amount of eggs. I cover the pot with it's lid and then set it on the stove on high heat until the water starts boiling. I let the eggs boil for two minutes before turning off the heat completely. I leave the lid on the pot, and let it sit on the hot turned off burner for 10 minutes. Once the 10 minutes is up I transfer the eggs into a bowl of ice water to allow them to cool. This results in perfectly cooked yolks every time.

Deviled Egg Toppings:

Some of my favorite toppings for deviled eggs are:
  • Paprika
  • Green Onion
  • Everything But The Bagel Seasoning
  • Black Olives
  • Parsley

How Long Are Deviled Eggs Good For:

Deviled eggs are best stored in an airtight container in the fridge for up to three days. But this is the best deviled egg recipe, so they will likely not last that long.

Single Serving Mac N Cheese

Single Serving Mac N Cheese

Single serving mac n cheese is a quick 10 minute lunch recipe you can make anytime you need some delicious and wholesome comfort food.

Does anyone else think that boxed mac n cheese tasted significantly better when they were 12 versus being a full grown adult? I swear it used to taste good, and now it just tastes well... gross. No shame on anyone who loves it. I have found that it's just as easy for me to make homemade mac n cheese as it is to make it from a box, and that's what we've opted for in our home for the last few years. This single serving mac n cheese makes the perfect small batch amount to eat for lunch, dinner, or whenever you need a comfort food fix.

A small bowl of mac n cheese on a white plate with a blue towel in the background.Single Serving Mac N Cheese:

This single serving mac n cheese recipe is made on the stove top in just about 10 minutes. All you need to do is cook your elbow macaroni, and while that is boiling, prepare your cheese sauce. For the cheese sauce you're going to melt some butter in a pan, then whisk in some flour. Combine the butter and flour together until it gets bubbly, then stir in the milk. Once the milk is well combined, stir in the cheese until it's all melted and a smooth texture throughout. When the macaroni is done cooking, drain off all the excess water, toss with the cheese sauce, and serve immediately.

How to Make a Roux for Mac N Cheese:

As mentioned previously, part of this recipe involves making a roux. This means you're using a combination of butter and flour to make the base for your dish that will help to thicken and add body to the sauce. For this particular roux, you will melt 1 tbsp butter in a man on medium high heat. Once the butter is melted, sprinkle in 1 tbsp of all purpose flour. Stir them together until well combined and the mixture begins to bubble. At this point you'll add in your milk, stir until well combined, and then add in your shredded cheese, again, stirring until it all comes together and is velvety smooth.

Healthy Mac N Cheese Recipe Variations:

While I'm a total fan in full fat dairy, always, I recognize some people might want some ideas of ways they can make this meal more macro friendly, or lower calorie. You do you! Here are some ideas:
  • Use a plant based protein pasta such as chickpea or red lentil pasta
  • Use a lower calorie milk such as skim, or a plant based option
  • Use a lighter cheese such as part-skim mozzarella

If you want a quick and easy protein packed lunch, this egg salad recipe for one is the perfect quick and easy option you can prep ahead of time!

Egg salad has always been one of my very favorite lunches, and it's a favorite of Derek's too. There was a point in time where we made egg salad almost exclusively every Sunday when we got home from church. We don't make it nearly as often anymore, but it feels super nostalgic whenever we do. If you need a small, single serving, egg salad recipe for one, this recipe is for you!

This egg salad comes together with two hard boiled eggs, some red onion, mayonnaise, black pepper, salt, paprika, and green onion. It's super flavorful, and while you certainly can mix just mayo and hard boiled eggs together, the extra add ins bring it to the next level!

How to Make Hard Boil Eggs:

I know everyone has their own method for boiling eggs, but this has worked well for me every time for ten years.
  1. Place your eggs in a pot and fill it with hot water until the eggs are covered.
  2. Place the covered pot on the stovetop with the burner turned to high heat.
  3. Bring the water to a boil and let boil for one minute.
  4. Leave the covered pot on the hot burner for 10 minutes.
  5. When the ten minutes are up, transfer to a bowl of ice water and let cool for a minute or two before peeling.

Egg Salad Recipe for One Notes:

  • If you don't like onion leave it out.
  • You can toast your bread or not, depending on your preferences.
  • You could add some small diced celery which would also be amazing.
  • I put lettuce and tomato on my sandwich but again, totally optional.
  • You can prep several eggs ahead of time and keep them in the fridge to use throughout the week.

Panera Fuji Apple Salad

Panera Fuji Apple Salad

Panera's Fuji Apple Salad Recipe, shared by an old Panera employee. Find out how to make this classic sweet and tangy salad in the comfort of your own home!

A little known fact about me is that I went to a local community college my first semester of college, where I played on the school's tennis team. Feeling unfulfilled with the way life was going I dropped out of school and worked at Panera full-time making salads while I saved enough money to transfer out to school in Utah. So you could say I know a thing or twelve about making a Panera salad.

Panera has ridiculously strict rules about their salad making though. For instance, the small greek salad can only have three black olives in it, and if you give a customer a fourth or fifth olive and the manager finds out, you will 100% be reprimanded for those two olives. Luckily when you make Panera at home, you can add all the toppings you want and no one will ever know.

Panera Fuji Apple Salad:

Panera's Fuji apple salad comes together with spring mix salad, Panera Fuji Apple Dressing, apple chips, cooked chicken breast, gorgonzola cheese, red onion, tomato, and pecans. It is serisouly a delicious salad combination. Even my husband who is more picky about vegetables than me gladly ate almost this entire bowl while I was cooking dinner.

Panera Fuji Apple Dressing:

Panera's Fuji Apple Dressing is hard to replicate. There are a lot of copycat recipes online but as an old Panera employee I can tell you that none of these recipes are even close. A little secret though: you can purchase the actual fuji apple dressing right at your local Target. I'm going to go out on a limb and say this is widely available nationwide because Utah doesn't even have a Panera, but they still carry the dressing in our Target stores. It's right in the produce section by the bagged carrots and other refrigerated dressings. Pick up a bottle the next time you're there and save yourself the grief of making a homemade dressing that won't even come close to the real thing.

Apple Crisp Chips:

Another signature part of the Panera Fuji Apple Salad are the apple crisp chips. The exact ones that they use are hard to come by, but these Bare brand ones that are also sold at Target are the closest I've been able to find.

Side note, after doing a bit more research, I was able to pinpoint that the Panera apple crisp chips are these Seneca Apple Chips. They're available at a different local grocery store, and might be at a store near you too!

Panera Fuji Apple Salad Recipe Tips:

  • I've provided measurements in the recipe but they really don't have to be exact. Add more or less of whatever you feel like. It's mostly just a sprinkle of all the toppings, so play with them and use the amounts you like.
  • I purchased both my apple chips and salad dressing at Target, you may be able to purchase similar varieties elsewhere.
  • I used honey roasted pecans because they're delicious.
  • I almost never cook my own chicken. Purchase a rotisserie chicken and chop some meat off of it for this recipe. You can use the leftover chicken in so many different recipes throughout the week.
  • The serving of this salad is large because the recipe is intended for this to serve as a full meal. If you're preparing it as a side dish for a family meal, it would likely make about four side dish servings.
